Animal Science

The main mission of the Chair of Dairy Science is education in the field of dairy science, which is inseparably connected with scientific research work, which takes place in close association with the Institute of Dairy Science and Probiotics (IML-PRO). The educational process is carried out at all levels (BSc, MSc, PhD) of various Bologna study programs at the Biotechnical Faculty (BF), University of Ljubljana. In lectures, practical classes and seminars, students gain knowledge about the properties of milk and milk products, the processing of milk, the technological processes of manufacture of fermented dairy products and accompanying biochemical processes of functional foods and their active ingredients (probiotics, prebiotics, bioactive peptides etc.) and the importance of ensuring food safety and quality.
